Being hungry for crab meat, we searched for 10 days and finally on the last day of our trip found this quaint little place by the docks of Port Denarau, Fiji. Finished of 1.5 kilos of mud crab under an hour, draining the fiery spiciness with some chilled beer.
Food prepared in underground earthen oven has been playing an integral part in the Fijian culture.
As much as you would enjoy the pristine beaches and the island life, you must try this. It is one of the oldest and simplest forms of feasting in Fijian culture, in which fish, meat and veggies are cooked in an underground barbeque.
A pit is dug in the earth and rocks are strategically placed to form the oven base. They are heated until red hot. Firewood and sticks are then spread equally all over the pit before being lit.
Chicken, fish and veggies like cassava, dalo, potatoes are then wrapped in banana leaves or palm baskets and placed inside the pit. Soon the oven is filled with food, covered with earth and slow cooked.
